Butternut Squash Lasagne from From My Carolina Home

In this interim between Christmas and the New Year, it is good to have a meal that is lighter and vegetarian based, after days of heavier meals. With this in mind, I roasted a small butternut squash, and adjusted my recipe for lasagne to make a smaller version for two. This is enough for a small 8-inch square baking dish, and will give you two meals for two. If you like, you can make it in two loaf pans and freeze one before the final baking for a meal ready to go at a later time.

Meatless Main Course Recipes from From My Carolina Home

These are nutty times in the grocery store, and it is not unusual to see entire cases or shelves empty.  Our local stores have begun limiting purchases, not a bad idea to reduce hoarding.  Still, when you go to the meat counter and see not one package of chicken left, or the pork is down to some ribs and ground pork, it is time to think about having some all plant based meals.  We do this from time to time, but we are thinking of going to a more regular schedule.  We eat a fair amount of  seafood, but for ...

Double Chocolate Smoothie Bowl aka Chocolate Craving Buster Bowl from Pieced Pastimes

I call this my 'Chocolate Craving Buster Bowl' for good reason. As many others, I have a thing for chocolate and I try to find a healthy balance to include this in my diet. This smoothie bowl more than satisfies any chocolate cravings and the best part is that once I've had a bowl, I don't want or need anything chocolate for quite some time afterwards. "Life is short.
