Zucchini Oat Muffin Recipe from Fabric Mom

Zucchini Oat Muffins

Ingredients:
1 cup Zucchini grated or shredded
2 Eggs
1/2 cup Quick or old fashioned oats
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 cup Brown sugar substitute like Truvia or Swerve (Or Regular Brown Sugar)
1 tsp Cinnamon
1 cup All purpose flour
1/2 tsp Salt
1 tsp Pure vanilla extract
1/3 cup Unsweetened applesauce

Pre-heat the oven to 350 degrees. Spray the muffin pan with cooking spray.

When we took our vacation last year to Yellowstone, I had a revelation. For my entire life, I never thought that huckleberries were a real fruit. Chocolate Chip Peanut Butter Banana Muffins from Parties and Patterns


Chocolate Chip Peanut Butter Banana Muffins
(These are really soft muffins and so delicious!)
Bake at 350 degrees for 20-25 minutes.

3-4 ripe bananas
6 Tbsp butter
1/2 cup peanut butter
3/4 cup brown sugar
1 egg
1 tsp. vanilla
1 1/4 cup  flour 
1 tsp. baking soda 
1 tsp. baking powder
1/2 tsp. salt
1 cup chocolate chips
Mash bananas. Add egg, butter, peanut butter, brown sugar and vanilla. Stir in dry ingredients except for 1/4 cup flour. Mix until just combined. Mix chocolate chips in the 1/4 cup flour and add.

January Cooking from Diane Gaudynski ~~~ A New Tradition in Quilting


January means more time at home, more cooking.  I've been re-visiting old favorites, tweaking recipes, trying to get things just right, and eating the trial runs!  Finally the blueberry muffins are perfect, tender and yummy, blueberries oozing out on my blue plate, topped with a drizzle of icing.  

I've made artisanal pizza, deconstructed beef stew (incredible!), oatmeal cookies that will fill you up all day long.  We are losing weight steadily because I truly believe made from scratch food, real food, is better for you than a diet.  Oh, and a bit of moderation, which isn't easy ...
