Autumn Jubilee in the Kitchen from From My Carolina Home

Autumn is my favorite time of year for being in the kitchen, making pumpkin bread, trying new recipes, cooking comfort food, making football snacks, and hearty soups for chilly days. I am lucky that My Sweet Babboo loves vegetables of all kinds, so experimenting with them is fun. She's having what for lunch?? from caledonia quilter

 This is a bowl of leftover green beans (DH does not like green beans) and pickled beets (DH also does not like pickled beets, the weirdo) and feta cheese.



This is what I have picked so far today:
That's 5 sweet peppers, 2 lovely tomatoes, a bunch of cherry tomatoes, 2 strawberries (now gone - they were my lunchtime appetizer), a container-thingy of purple beans (which turn green when you cook them), and 3 zucchinis.  I already have 9 zucchinis in the fridge and I gave away 3 yesterday.  I have to go back out again to pick the Roma ...

Zucchini Oat Muffin Recipe from Fabric Mom

Zucchini Oat Muffins

Ingredients:
1 cup Zucchini grated or shredded
2 Eggs
1/2 cup Quick or old fashioned oats
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 cup Brown sugar substitute like Truvia or Swerve (Or Regular Brown Sugar)
1 tsp Cinnamon
1 cup All purpose flour
1/2 tsp Salt
1 tsp Pure vanilla extract
1/3 cup Unsweetened applesauce

Pre-heat the oven to 350 degrees. Spray the muffin pan with cooking spray.

Grate the zucchini. Use a wire strainer and spoon or cheese cloth to get the extra moisture out of the zucchini ...

Zucchini in Abundance from Ravelly1

 



One of my girlfriends gifted Mr. Cowboy & me with several large zucchini......OMG...... I was over the moon but only knew one way to cook them. So Google came in handy with an oven recipe.  There are several recipes to choose from. I use the one with Parmesan cheese.
Let's just say yummy doesn't even describe the tastiness.

Embroidery Quilt, Zucchini, and Laundry from caledonia quilter

This gal loves doing embroidery and is making quilts for her grandkids.  This one is number four,  think.
Edge to Edge in the center portion, with a separate border.
I still have zucchini in the freezer (which, as you can imagine, DH is THRILLED about, lol).  This was good.  Normally you see zucchini used in a sweet loaf but a savory version was great with soup and made for a nice bite at lunch.

Let's wrap up June (since it's already August!) Log Cabin & A Unicorn from caledonia quilter

Log Cabin - I love the colours in this.  The quiltmaker wanted it quilted "like in the magazine".

That involved feathered swirls in the blocks, from the center out to the corners, and then a simple meander in the rest of it.
No s.i.d. kept the cost down a bit.

Unicorn - this is all paper pieced.  Whoo baby!  

Thankfully the quiltmaker sent me a pic of how she wanted it quilted.  Otherwise I'd probably still be staring at it wondering what the heck to do.
