Vegan Mince Singapore Noodles
Sauce
- 1 tbsp garlic (crushed )
- 4 tbsp soy sauce
- 2 tbsp maple syrup
- 1 large lime (juiced)
Noodles
- Rice noodles
- 4 tbsp sesame oil
- 1 small onion (sliced)
- 2 red peppers (sliced)
- 18 sugar snap peas
- 2 small green chillies (chopped)
- 2 tbsp soy sauce
- 8 tsp curry powder
- 1 cup soy mince
For serving
- sesame seeds
- chives
- green onions

Prepare rice noodles according to instructions and soak soy mince in boiling water for 15 minutes – or if using another type of mince follow package instructions
