Katie's Chocolate Pecan Strata from Parties and Patterns

1 1/2 sticks butter melted                                         
1 1/2 cups flour sifted                                              
1 cup pecans, chopped                                             
8 oz. cream cheese softened
1 cup sifted powered sugar
2 cups Cool Whip
6 oz. package instant chocolate pudding
6 oz. package instant vanilla pudding
Chocolate Bar

Mix together the first 3 ingredients and press into the bottom of a 9 x 13" baking dish. Bake for 20 minutes at 400 degrees. Cool completely. Fold together the next 2 ingredients with 1 cup of Cool Whip and spoon it over the crust. Refrigerate until set.

It was pitch black at 5:00 pm. It was raining. Depressing. I decided that to counterbalance the negative effect the month of November has on us, energy-packed and healthy snacks are in order.

Having pinned a few delicious-looking ball recipes recently, and having almonds, coconut and almond butter on hand, I made these No Bake Almond Butter Coconut Bites.  I didn’t have flaxseeds but replaced them with more chopped almonds. I also substituted maple syrup with honey. Maple syrup in undeniably delicious, but honey offers more health benefits.
