Vegan Mince Singapore Noodles from JuniperBean

 

Vegan Mince Singapore Noodles

Sauce

  • 1 tbsp garlic (crushed )
  • 4 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 large lime (juiced)

Noodles

  • Rice noodles
  • 4 tbsp sesame oil
  • 1 small onion (sliced)
  • 2 red peppers (sliced)
  • 18 sugar snap peas
  • 2 small green chillies (chopped)
  • 2 tbsp soy sauce
  • 8 tsp curry powder
  • 1 cup soy mince

For serving

  • sesame seeds
  • chives
  • green onions
  1. Prepare rice noodles according to instructions and soak soy mince in boiling water for 15 minutes – or if using another type of mince follow package instructions

It all started with a visit to St. Louis last summer to stay with my friend, Sandy. After catching up on our lives and other news, she posed what I thought was an innocent question, but turned out to be anything but.
