With prices going up every day (or so it seems), we’re trying to pay more attention to what we buy. Unless there’s something I really need, there are just some things I will not buy. There are things I will buy whether they’re on sale or not. A few weeks ago, I found “cotton candy...

It’s so nice knowing most anything we buy in the store can be made at home, especially those things that take few ingredients and are super easy. One of the best things about sourdough are all the “discard” recipes. Yesterday morning I fed my starter because I was going to start sourdough sandwich bread last...
read moreGood morning, my friends. It's shaping up to be a nice day here at the Traveling Three Cats Ranch. As I'm writing this, I have some Carrot Cake Baked Oatmeal in the oven. I'm hoping if I write slow, I can show it to you at the end of the post. On today's agenda will be a visit to Chiricahua National Monument. In a previous post, I was wringing my hands over the fact that the scenic drive was closed, and that meant there wasn't much of a reason to visit. When I checked the ...

I even promised to spend National Quilting Day piecing those blocks that I was behind on and showing you the leader-ender blocks that are taking shape at the same time. Well, truth be told, that didn't happen. Last

read moreGood afternoon, my friends. It's our last day here in Escondido. Tomorrow morning, we will head east again, stopping in Arizona for a couple of days, and then continuing on our journey to the middle of Texas, where we will hope to see the solar eclipse.
My morning started with some slow stitching. I filled what was in my hoop, and now I've moved my hoop up to begin stitching the kitten's face and the flower.

Good afternoon, my friends. My dear friend, Debi, picked me up this morning, and we visited two quilt shops before we were finished for the day. Is there a better way to spend a day than fabric shopping with a friend? I think not.
Before Debi arrived, I went to work on a dessert I wanted to make for St. Patrick's Day. Lacking any Irish Cream, I ended up making something else. In the interim, we acquired the missing ingredient, and so I baked this up this morning. This is Chocolate Shamrock Bread Pudding. We haven't actually tasted ...

Hooray! Our Starlink connection is up and running again. Mike is convinced the problem we've had with ours was simply a fluke. Many, many, many RVers are using Starlink without problems, and so we think we just got a defective dish. They sent us a complete new system. Mike hooked it up with our old dish, and it still didn't work. When he switched to the new dish...magic! And I'm not kidding about the magic. I gave up trying to understand how things work back in the mid-70's when FAX machines first became widely available ...

read moreI’ve mentioned on here before that I love corned beef and Vince doesn’t. Apparently, he just didn’t like the way I was cooking it. Today I made The Salted Pepper’s Corned Beef and it was delicious. Vince said “This is the best corned beef you’ve ever made. I normally don’t like it and I love...

I've done three loads of laundry today and I made a macaroni salad for tonight's dinner. We're having BLATs. Those are BLT's with some avocado added. If you've been keeping count, you should know that I'm gaining on my goal to use avocados 1,001 different ways. We ...

read moreGood afternoon, my friends! Or maybe I should say, good evening. We're nearing dinner time here at the Traveling Three Cats Ranch. Before I forget, I wanted to tell you the Starlink unit is set to be delivered Monday. Yay! (I know y'all have been waiting on tenterhooks for that announcement. You can rest easy now.)
So here's how we spent our day. We had lunch at the Oceanside Broiler in the Oceanside Harbor. This was the view from our table.

Good afternoon, my friends. We spent a lovely day with our friends Debi and Jim. They are members at several of the wineries north of Escondido in the city of Temecula. I'll say more about that in a minute, but first I had some kitchen duties to take care of.
A few days ago, I received an email from America's Test Kitchens with a recipe for testing. It was for a Pumpkin Gingersnap Icebox Cake. Looking it over, it seemed easy enough to do in the RV. There was no baking involved...just a little microwaving of the ...
